Gluten-Free Broccoli & Cheddar Quiche

Ingredients:

2 cups. rice, cooked

5 egg whites

1 T. coconut oil

3/4 c. organic half and half

2 garlic cloves, minced

1/2 large onion, diced

8 oz. organic pork sausage (I used wild Boar a friend had processed for us)

1 c. broccoli, steamed

8 oz. raw cheddar cheese, shredded

1/2 t. kosher salt

1/2 t. black pepper

For The Crust:

Take the cooked rice and stir in 1 egg white.  Press into a greased pie plate.  Bake in an oven at 350 for 10 minutes. Set aside.

For The Filling:

Whisk the egg whites with cream, garlic, salt & pepper in a large bowl. Set aside.  Steam the broccoli, chop and add to the egg white mixture.  Cook the onions and pork sausage in a medium skillet until the meat is browned and onions soft.  Make a layer of the meat and onions on the bottom of the rice crust.  Add a layer of cheese, keep about 1/2 c. for the topping.  Pour the egg mixture over the meat. Top with remaining cheese.

Bake in oven at 350 for 45-55 minutes until bubbly.  Let it set for 5 minutes before cutting.

*Tip: This could all be assembled the night before and baked in the morning!
