Apple And Cinnamon Whole Wheat Muffins

Ingredients:

1 3/4 c. freshly ground organic hard white wheat flour

1 t. organic baking powder

1/2 t. baking soda

1/4 t. salt

2 t. cinnamon

pinch of allspice and nutmeg

1/4 c. ground flax seed

1/3 c. raw honey (or maple syrup)

1/4 c. organic coconut oil

2 T. almond milk

1/3 c. yogurt (I used organic vanilla yogurt)

2 organic eggs

1 1/2 c. organic gala apples, peeled and chopped finely

1 T. organic raw sugar

2 T. homemade granola 

Directions:

Preheat the oven to 375. Combine the the dry ingredients in a medium bowl and set aside.  In an electric mixer mix all the wet ingredients, except the apples, until well combined.  Slowly incorporate the dry ingredients, and mix to combine.  Stir in the chopped apples.  I used an ice cream scoop and did one scoop into paper lined muffin tins.  Top them with a sprinkle of sugar and granola.

Bake them in the preheated oven for 15-17 minutes.  Serve with organic butter and a drizzle of raw honey.
