Turkey and Sage Meatloaf

16oz  organic ground turkey

1 1/2 c. chopped bread (I used Udi’s gluten free sandwich bread)

2 T. fresh sage, chopped

Pinch ground nutmeg

1 t. fresh thyme

1/2 t. kosher salt

1/2 organic milk

1 organic egg

half large onion, diced

1 large carrot, diced

2 cloves of garlic, minced


TOPPING (family recipe):

1/4 c. organic ketchup

3 T. organic brown sugar

1/4 t. nutmeg

1 t. dry mustard

Mix all together in bowl and pour over the meatloaf.


Preheat oven to 350.

Mix the milk, bread and spices in a medium bowl.  Let it sit for about 5 minutes so the bread can get moist.  In a medium sauce pan saute the onion, carrot until soft, add garlic and cook 1 minute longer.  Take off the heat.  In a large bowl, whisk the egg and add the meat and onion mixture.  Combine all ingredients together and mix until well combined, I like to use my hands.

Form a loaf on a greased sheet and cover with the ketchup topping. Bake, uncovered, in the oven at 350 for 55 minutes or until internal temp reaches 170. Let it sit for about 5 minutes before serving.
