1 1/2 T. coconut oil
1/2 onion, thinly sliced
1 t. brown sugar
1 t. balsamic vinegar
1 apple, cored and sliced in rings
1 handful kale
organic raw sharp cheddar cheese
slices of Udi’s gluten-free sandwich bread
1 T. organic butter
Heat 1 T. oil in a pan. Cook the onions until they are tender, add balsamic vinegar and sugar. Cook a minute more, remove from pan and set aside. Add 1/2 T. oil and cook the kale and apple slices for 3 minutes. Just until the kale wilts a little bit and the apples brown. Remove from pan.
Heat your griddle and melt butter. Assemble sandwiches, place the onions, apple, cheese and top with a bunch of kale. Grill until cheese melts. Serve and enjoy!
