Gluten Free “Toll House” Chocolate Chip Cookies

  • 2 1/4 c. all purpose gluten free flour (I used Bob’s Red Mill)
  • 1 t. baking soda
  • 1/2 t. organic baking powder
  • 1 t. salt
  • 1/4. c. flax seeds
  • 1/2 c. (1 stick) organic butter
  • 1/2 c. coconut oil
  • 3/4 c. raw brown sugar
  • 3/4 c. raw sugar
  • 2 organic eggs
  • 1 t. vanilla extract
  • 1/4 c. whole milk
  • 1 c. semi sweet chocolate chips (Enjoy Life is the brand I use)

  1. Preheat oven to 375.
  2. In a medium bowl combine all the dry ingredients and set aside
  3. In an electric mixer blend the butter, oil and sugar together until fluffy
  4. Slowly beat the eggs in one at a time, beating generously in between each one
  5. Add the vanilla and mix well
  6. Slowly pour in the dry ingredients into the wet ingredients. Here is where you want to get it mixed quickly without “over mixing”
  7. Add milk and chocolate chips and stir until combined.
  8. Bake them for 9-10 minutes max or until the edges are browned. They will look slightly unfinished but you do not want to over cook them
  9. Let them cook for about 5 minutes on the cookie sheet before transferring to a wire rack
  10. It is best to wait until they are completely cool to eat these or else they crumble fairly easy. Once cooled they are awesome!

*NOTE: I used less chocolate chips because we like it that way, but you can add 12oz for the “normal” Toll House recipe.*
