Day Thirty Five.

 

It sounds a lot harder than it really is and this is coming from a Mom who felt completely lost at first (you can read that here). Cooking with ingredients that do not contain GMO’s is not that different than normal cooking, the hard part? Finding ingredients that do not contain them! It is more extreme than couponing. You have to go to the store armed with a menu plan, a grocery list, and a smart phone for those last minute checks. I have thankfully gotten a tiny bit faster and I am starting to get the hang of it.

 

Have you checked out the Non-GMO Project yet? If you have not, you should! They are up to some really cool things. They are an organization that is getting various companies to label their products with their label so it is easy to see that it does not contain GMO’s. It is such a good idea and I love it when I see their label! Makes everything so much easier.

I made a meal the other night that was not only our dinner, but it also doubled great for baby food. My 9 month old daughter LOVES it! I am on a Quinoa kick lately so you might see lots of recipes containing it, sorry in advance, but this stuff is awesome! Not only is it gluten free, but it actually tastes good and my non-gluten-free eaters do not mind eating it, double bonus! Mommy does not have to make 2 separate meals! I hope you try it.

 

Quinoa & Kale Over Baked Sweet Potato.

Ingredients:

1 c. un-coooked quinoa

1 small onion, diced

4  T. coconut oil

2 c. organic chicken stock

2 c. kale, chopped

1 t. fresh sage

pinch cinnamon

freshly ground pepper and salt, to taste

4 sweet potatoes, baked

 

Preparation:

  • Bake your sweet potatoes, make sure you coat them in 1 T. coconut oil to make the skins super yummy!
  • In a medium bowl, melt 1 T coconut oil. Cook the onion until soft. Add the quinoa and chicken stock and bring to a boil. Lower heat and cover for 16-18 minutes or until liquid is absorbed.
  • While the quinoa is cooking prepare the kale. Melt remaining 2 T. coconut oil in a large pan. Add kale and cook until wilted. Add the spices at the end and cook an additional minute or 2.
  • Add the kale to the quinoa. Serve over a baked sweet potato. You may want to sprinkle parmesan cheese on top. 🙂

Day Thirty Four. “Monsanto Protection Act” Signed By Obama.

Do you know what the HR 933 Provision Act is? It is a law that Obama just signed protecting Monsanto, the creator of GM seeds, regardless of how harmful the seeds may be for humans. The law is in act for 6 months until he can find more funding (which he most likely will). Despite over 250,000 concerned American’s signing a petition, people outside the White House protesting, Obama still signed the bill into law on Tuesday. The media kept it in the shadows and the gay marriage topic ruled the tube that day.

Look at this one part of the bill, this is so disturbing to me. Is it to you?

“The “Monsanto Protection Act” effectively bars federal courts from being able to halt the sale or planting of controversial genetically modified (aka GMO) or genetically engineered (GE) seeds, no matter what health issues may arise concerning GMOs in the future.” -International Business Times

“Sen. Roy Blunt, Republican of Missouri, actually worked with Monsanto on a provision that in effect allows them to keep selling seeds, which can then go on to be planted, even if it is found to be harmful to consumers, is stunning. It’s just another example of corporations bending Congress to their will, and it’s one that could have dire risks for public health in America.” -International Business Times

I am not asking everyone to stop eating all GMO’s forever, I know this is nearly impossible. I am not asking you to ever stand on the streets and protest or to post to social media about how big and bad Monsanto is and to boycott certain companies. But I am asking you to PLEASE BE INFORMED. Please pay attention to what the Government is doing to our food supply and take action as you see necessary. We owe it to ourselves and our children. The future of real food is in serious danger and you might not know until it is too late.

Remember Frankenfish? The genetically engineered salmon? Well, he has not gone away but you have a chance to make your voice be heard and sign a petition telling President Obama you do not want GM salmon. I will leave you with a kid friendly, non-gmo recipe for pizza. 🙂 I will post the recipe for the sweet potato with quinoa and kale tomorrow.

Quick ‘Pizza’ Sandwiches 

Ingredients:

1 1/2 cups cherry tomatoes, whole

2 T. organic olive oil

3-4 garlic cloves, minces

Pinch kosher salt

fresh basil leaves

4-5 slices of sandwich bread, depends on how “loaded” you want them.

Raw parmesan cheese

Preparation:

Preheat oven to 400 degrees. In a medium oven-safe bowl toss tomatoes, garlic, salt and olive oil. Cover and roast until tomatoes have popped, about 15-20 minutes. I actually forgot to set a timer so the time might be different. I just kept an eye on them, sorry! When the tomatoes look wilted and most of them have popped remove from oven.

On a baking sheet line bread. Top with tomatoes and grated parmesan cheese. Roast until cheese is browned. Serve with fresh basil on top. You can eat it open faced or fold it over, like in the picture, for the kids.

After all the trials we have been going through in this house recently good news was a welcomed change! We got the phone call with the biopsy results for Bradley’s procedure while I was laying in the hospital bed awaiting my test. I was nervous, but the results came back negative for Celiacs Disease! Praise God! The Doctor said he most likely just has a gluten intolerance and we need to still be careful of giving him gluten. I don’t care that we still have to follow a gluten free diet, the news of no Celiacs makes this Mommy very happy. Thank you for praying and for all your concern and support.

We do need to consider Crohn’s for him and we are talking about the process of what it would take for him to get tested. Crohn’s is hereditary so it would make sense if I have it. We tested his upper GI tract and his Doctor could have missed seeing the Crohn’s if it was primarily in his lower GI (which is where mine is located).

I think the packaging on this product is genius. “Made with REAL fruit”…Really!? Where? “A great source of vitamins and minerals” Seriously, show me! Please pay attention to the actual ingredients and not just the clever marketing schemes on the front of the box. This little box of Pop Tarts contains (at least to my guessing) over 10 GMO ingredients.

Here is a recipe I came up with for homemade Pop Tarts. This recipe is gluten free, but you could make the crust with your own homemade pie crust to make a non-gluten free version. They were a big hit with my kids and they did not miss the boxed Pop Tarts.

Ingredients:

1 1/2 c. organic gluten free pancake/ baking mix (Plus a little extra for dusting)
2 T. raw sugar
2 organic eggs
1/2 c. organic all natural shortening or butter
pinch of salt
organic strawberry jam

Directions:

Preheat oven to 350.

Mix all the ingredients except the jam together in a medium bowl. Mix until just incorporated. Spread out on a floured surface and roll out to 1/2 inch. It will be very sticky! Use flour to keep it from sticking.

You want it to be thicker than a pie crust, gluten free dough does not rise like gluten dough.

Cut out your rectangles and transfer to greased cookie sheet. Spread 1 T. of jam in center.

TIP: Put jam into a plastic bag and cut the tip off. Pipe it around the edges and then do a generous glob in the center.

Once all jam is piped, place the tops on the pop tarts. Use a fork and gently press around the edges. Put a few holes on the top for venting.

Bake for 15-17 minutes until lightly browned. Let them cool completely. I stored them in the refrigerator to keep them firm. Gluten free dough is so crumbly! They are great toasted or plain.

It made 7 pop tarts.

Day Thirty Two. When Answers Are Not What You Wanted To Hear.

Day Thirty Two.

What a weekend we have had! Sometimes life comes at you so fast you feel like you got blindsided and left for dead. This weekend was one of those… I had a colonoscopy that revealed some unpleasant news, two of my kids got a nasty stomach bug and my littlest is in the middle of teething hell. It has been a fantastic weekend, ha! 🙂

I started this journey a little over a month ago, I have learned so much that I would never change, but it has also been the most challenging month for our family on so many different levels. It seems in my quest for health we have gone through MORE health problems. I feel like we are on a roller coaster and at the moment we are on the huge downward plunge – I guess I just need to hold my hands up, close my eyes and scream until we reach the end and start to climb up again. Sounds like more fun anyways.

We are waiting on several biopsies to confirm for sure, but my initial results revealed Crohn’s Disease. We did catch it at the very beginning, to which I am so thankful, but I was still not ready to hear THAT. I am a young mom, have very small children, have not even been married 10 years yet…I should be in my prime for health and now I am getting slapped with a second disease that has no cure, just management. It was tough to hear.

My Doctor wanted to start me on medication right away to heal my gut. Quick Fact: roughly over 500,000 Americans suffer from Crohn’s Disease. In other Countries this number is drastically different. I wonder why….GMO’s perhaps? I am not sure how long I will need to be on the medication, she made mention for several years. My plan is to take it long enough to get my colon healed and then, hopefully, slowly wean myself from it by eating the right foods and continuing the healing through food.

So many thoughts have been running through my head. I am trying to “not even go there” right now and wait for confirmation on the biopsies. The only change I needed to make right away was to stop breast feeding my baby. Wow, I was not ready for how hard that would be or how upset I would be over it!

I had the unique experience to actually SEE inside my gut, to see that damage that has happened in my short 20 something years here on earth. I am even more concerned and passionate about eating healthy and the way God intended us to eat. So, on that note. Here is a good Know Your Ingredients, Name This Product for you.
